5 Treats to Refresh Your Summer Spirit


How's your summer been? I hope you're doing fun and relaxing activities to nourish your spirit.


This summer I've been boating, and swimming, and floating in the Chesapeake Bay in Maryland and the Delaware River in Pennsylvania. I love being in the water! For me, it is incredibly healing, calming and rejuvenating.


I also had fun spending time in the kitchen making delicious, healthy treats that I’m excited to share with you.


1) Creamy Chocolate Avocado Banana Mousse

Ingredients:

1 ripe avocado

1 overripe frozen banana

½ cup full fat coconut milk (I like Trader Joe’s brand as it’s additive-free)

¼ cup filtered water

3 ice cubes

½ vanilla extract

1.5 tsp cinnamon

3-4 Tbsp raw cacao powder

3 large, soft medjool dates w/o pits

1-2 scoops beef gelatin or collagen peptides (optional)


Directions: Blend together and enjoy with shredded coconut flakes, cacao nibs, nuts, seeds, berries. Thick, creamy deliciousness! Makes a huge portion: serves 1-2. Let's face it, I ate the whole thing.


2) Kombucha Popsicles

Popsicles are fun! Reminds me of my childhood. These Kombucha Popsicles are a very easy-to-make treat to beat the heat! Plus they take just a few minutes to assemble. I used frozen organic pineapple chunks, fresh mint, and Health-Ade's Tropical Punch kombucha. Let me know what combo you try.












3) Peach Plantain* Cobbler

It’s peach season here in New York and this gluten/dairy/grain-free Peach Plantain Cobbler is delightful! The recipe says to peel the peaches but I kept the skin on.


*Shout-out to green plantains, which have some excellent health benefits including: high in fiber, potassium, magnesium, vitamins A, C, and B6. Plus, green plantains are a resistant starch. Resistant starch is a carbohydrate that resists digestion in the small intestine and ferments in the large intestine/colon. As the fibers ferment they act as a prebiotic and feed the good bacteria in the gut, which support gut healing. Thumbs up to healing our guts!


4) Berries with Coconut, Lime, & Mint

Ingredients:

2 cups berries of your choice (fresh or frozen)

½ cup coconut milk

Juice from 2 limes

Fresh mint


Directions: Place berries and mint in a bowl and pour coconut milk and lime juice over. Mix and put in freezer for about an hour. Or enjoy chilled from the fridge.



5) A Recipe to Treat Yourself


Ingredients: love, laughter, sleep, movement, gratitude, compassion, and wholesome foods


Directions: Mix all together and enjoy a hefty serving every day.
